Quick and Easy “V8” Juice


This is one of my favorite juices for an afternoon “pick-me-up” as it is like a salad in a glass.  It is a green drink unlike the original V8 which is very tomato juice concentrate based with very little in the way of the other vegetables.  Even being greens heavy it tastes remarkably like the original formula but is bursting with phyto-nutrients and enzymes.

  1. 2 organic tomatoes (quartered)
  2. 3 celery stalks (organic and with leaves if possible)
  3. 1 large cucumber (organic or peeled)
  4. 2 cups kale (chopped)
  5. 1 cup spinach (roughly chopped with stalks)
  6. 1 cup watercress or arugula
  7. 2 carrots
  8. 3 red radishes
  9. 1/2 cup parsley (roughly chopped with stalks)
  1. 2 cloves garlic
  2. 1 teaspoon celtic sea salt
  3. 1/2 teaspoon black pepper
  4. 1/2 teaspoon cayenne pepper
  1. Chop vegetables into rough pieces and feed through your juicer. Alternatively, you can blend this drink for a thick "smoothie" in a high speed blender.
